Recipe for the Best Beef/Chicken Esfirra You’ll Ever Eat

This is an esfirra recipe with the fluffy dough.

Dough Ingredients:
500 grams of wheat flour
250ml of warm milk
50ml of oil
45 grams of sugar
20 grams of organic yeast (the one you buy at the bakery)
10 grams of salt

Meat Stuffing Ingredients:
700 grams of ground beef (flat or chuck)
1 diced tomato
Juice of 1/2 lemon
3 minced or grated garlic
1/2 chopped onion
Salt and black pepper to taste
1 pinch of cinnamon

Chicken Stuffing Ingredients:
1 cooked and shredded chicken breast
1 diced tomato
3 minced or grated garlic
1/2 chopped onion
Salt and black pepper to taste
2 tablespoons of tomato paste

Dough preparation:

  1. Mix the yeast with the sugar;
  2. Mix all liquids;
  3. Mix the liquids with the yeast dissolved in sugar;
  4. Add flour, salt and knead the dough until smooth;
  5. Let the dough rest for 30/40 minutes.
  6. Filling preparation:
  1. In a pan, fry the onion until “sweat”, add the garlic until almost golden.
  2. Add the ground beef and sauté (or the cooked and shredded chicken breast), add seasonings and the chopped tomato.
  3. Let the stuffing cool
  4. Note: The method of preparing the stuffing is the same for meat and chicken, what changes are the ingredients used.
  1. Grease the mold with margarine.
  2. Divide the dough into balls of the size you want to make the esfirras.
  3. Open the balls, add the stuffing and model.
  4. Preheat the oven for 20 minutes.
  5. Bake until golden at 180-210 degrees (this process is faster in electric ovens, it is usually ready in +- 15 to 20min), keep monitoring.
