Microwave baked eggplant recipe

1 eggplant
Coarse salt
Minced meat as much as you need
Sliced mozzarella to taste
Salt and oregano to taste.

Cut the eggplant and sprinkle both sides with coarse salt. Leave on a plate for 15 minutes and then turn for another 15 minutes.
After rinsing with plenty of running water, let it drain and dry.
Place in proper container, microwave at maximum power for 3 minutes (covered).
Remove and reserve. Prepare the minced meat to your liking.
Spread over slices and top with cheese.
Sprinkle with the oregano.
Return to the microwave and cook for another 2 minutes or until the cheese is melted.
Serve while still hot.
